Winemaker’s Goal, In crafting the 2019 Juslyn Cabernet Sauvignon, I was looking to encapsulate the richness of the 2019 vintage through careful handling in the cellar. Pump-overs were carried out twice daily for short periods, in an effort to control extraction and curb tannin. A large percentage of new oak was used as the vintage was able to handle it! In finishing and final blending, small percentages of the estate’s Merlot, Cab Franc and Petit Verdot were used (~5% in total) to provide a bit more complexity to the nose. Juslyn Perry’s Blend 2019 Winemaker’s Goal – In crafting the 2019 Juslyn ‘Perry’s Blend’, I was looking to craft the Yin to the Cabernet Sauvignon’s Yang. Starting here with the Merlot, Cabernet Franc and Petit Verdot (about 44% of the total), I used varying blocks of the Cabernet Sauvignon to craft an elegant partner to the bolder flagship wine. In the winery, Perry’s Blend was treated much the same as the Cabernet Sauvignon – though with slightly longer pump-overs for a bit more extraction. The more elegant blocks of Cabernet Sauvignon that married with the 3 other varieties were pulled from the flagship blend to add complexity and richness, while still allowing them to shine in the blend. Overall, an elegant Right-Bank-esque expression of Spring Mountain. $250
